VIETNAMESE CHICKEN NOODLE SALAD (Serves 4)

INGREDIENTS

  • 300g Mr Chen's Vermicelli noodles, prepared to pack instructions

  • 300g cooked chicken breast, shredded

  • 2 shredded carrots

  • 2 cups bean sprouts

  • 4 spring onions, finely sliced

  • 1 bunch coriander leaves, picked

DRESSING

  • 4 tbsp Mr Chen's Soy Sauce

  • 4 tbsp Mr Chen's Rice Wine vinegar

  • 3 tsp sugar

  • 3 tbsp vegetable oil

  • 2 garlic cloves, minced

GARNISHES (OPTIONAL)

  • Fried Asian shallots and sliced red chilli

METHOD

  1. Combine dressing ingredients in a jar and shake well to combine, then rest 5 minutes to infuse. Soak vermicelli noodles in boiling water 5 minutes. Drain well for 5 minutes.

  2. Combine vermicelli noodles with remaining salad ingredients. Just prior to serving, toss through dressing. Garnish with fried Asian shallots if you wish.

Soak the rice noodles in boiling water for 3-4 minutes and loosen with a fork. Rinse under cold water then drain. The rice noodles are now ready to be added to your favourite soup, stir-fry or salad.
