easy chicken yaki udon

INGREDIENTS

  • 400g Mr Chen’s Udon noodles, prepared to pack instructions.

  • 200g chicken, diced

  • 2 – 3 cups stir fry vegetables, finely sliced (eg. carrot, cabbage, spring onions)

  • 1 tablespoon oil

Yaki Udon Noodle Sauce

  • 2½ tablespoons Mr Chen’s soy sauce

  • 2 tablespoons Mr Chen’s oyster sauce

  • 1 tablespoon mirin

  • 2 teaspoons brown sugar

  • 1 teaspoon Mr Chen’s rice wine vinegar

METHOD

  1. Mix all the ingredients for the sauce in a small bowl and set aside.

  2. Stir-Fry: Heat a wok / frypan over high heat and add the oil.

  3. Add in the diced chicken and stir-fry for 3-4 minutes until golden brown. Add the vegetables and stir-fry together for another minute.

  4. Add in the noodles and sauce. Continue stir-frying for 1 - 2 minutes or until well combined.

  5. Serve immediately.

  1. Add noodles to a saucepan of boiling water.

  2. Gently stir to separate noodles.

  3. Simmer for 1-2 minutes.

  4. Drain and rinse well before adding to your stir-fry, soup or salad.
