easy chicken yaki udon
INGREDIENTS
400g Mr Chen’s Udon noodles, prepared to pack instructions.
200g chicken, diced
2 – 3 cups stir fry vegetables, finely sliced (eg. carrot, cabbage, spring onions)
1 tablespoon oil
Yaki Udon Noodle Sauce
2½ tablespoons Mr Chen’s soy sauce
2 tablespoons Mr Chen’s oyster sauce
1 tablespoon mirin
2 teaspoons brown sugar
1 teaspoon Mr Chen’s rice wine vinegar
METHOD
Mix all the ingredients for the sauce in a small bowl and set aside.
Stir-Fry: Heat a wok / frypan over high heat and add the oil.
Add in the diced chicken and stir-fry for 3-4 minutes until golden brown. Add the vegetables and stir-fry together for another minute.
Add in the noodles and sauce. Continue stir-frying for 1 - 2 minutes or until well combined.
Serve immediately.
Add noodles to a saucepan of boiling water.
Gently stir to separate noodles.
Simmer for 1-2 minutes.
Drain and rinse well before adding to your stir-fry, soup or salad.
