SIMPLE SINGAPORE NOODLES

INGREDIENTS

  • 400g Mr Chen’s Singapore Noodles, prepared to pack instructions

  • 1 (200g) cooked chicken breast, shredded

  • 1 cup red capsicum, sliced thinly

  • 1 medium onion, sliced thinly

  • 4 garlic cloves, minced

  • 2 teaspoon grated ginger

  • Sliced spring onions, to serve

Sauce

  • 3 tablespoons Mr Chen’s soy sauce

  • 3 tablespoons Chinese cooking wine

  • 1 tablespoon curry powder

  • 1 teaspoon sugar

METHOD

  1. Combine the sauce ingredients in a small bowl and set aside.

  2. Heat 1 tbsp of oil in a wok and fry the garlic, ginger and onion for 2 minutes until onion is slightly softened.

  3. Add capsicum and cook for 1 minute.

  4. Add noodles, sauce and chicken and stir-fry until well combined and heated through.

  1. Add noodles to a saucepan of boiling water.

  2. Gently stir to separate noodles.

  3. Simmer for 1-2 minutes.

  4. Drain and rinse well before adding to your stir-fry, soup or salad.
