SIMPLE SINGAPORE NOODLES
INGREDIENTS
400g Mr Chen’s Singapore Noodles, prepared to pack instructions
1 (200g) cooked chicken breast, shredded
1 cup red capsicum, sliced thinly
1 medium onion, sliced thinly
4 garlic cloves, minced
2 teaspoon grated ginger
Sliced spring onions, to serve
Sauce
3 tablespoons Mr Chen’s soy sauce
3 tablespoons Chinese cooking wine
1 tablespoon curry powder
1 teaspoon sugar
METHOD
Combine the sauce ingredients in a small bowl and set aside.
Heat 1 tbsp of oil in a wok and fry the garlic, ginger and onion for 2 minutes until onion is slightly softened.
Add capsicum and cook for 1 minute.
Add noodles, sauce and chicken and stir-fry until well combined and heated through.
Add noodles to a saucepan of boiling water.
Gently stir to separate noodles.
Simmer for 1-2 minutes.
Drain and rinse well before adding to your stir-fry, soup or salad.
