THAI CHICKEN BURGERS

INGREDIENTS

  • 500g chicken mince

  • 2/3 cup Mr Chen's Panko Breadcrumbs

  • 1 tbsp Thai red curry paste

  • 1 tbsp Mr Chen's oyster sauce

  • 1 tsp brown sugar

  • 2 tbsp chopped coriander

  • 1 egg, lightly beaten

  • 6 burger buns, halved

  • Salad toppings (grated carrot, lettuce, coriander)

  • Mayo or sweet chilli sauce, for serving.

METHOD

  1. Combine mince, panko crumbs, curry paste, oyster sauce, sugar and coriander. Mix well.

  2. Using 1/2 cup mixture, shape into 6 x 3cm-thick burger patties. Place onto a tray. Cover. Refrigerate for 30 minutes.

  3. Heat fry pan and spray burgers with oil. Cook for 5-6 minutes each side, or until cooked through.

  4. Serve on fresh rolls with salad, mayo and sweet chilli sauce.

HOW TO CRUMB (Chicken, Fish, Prawns etc)

  1. Fill 3 seperate shallow bowls with flour, whisked eggs and panko crumbs.

  2. Gently press the food into the flour to coat, ten lightly shake off excess.

  3. Dip food into the whisked egg, allowing any excess to drip off.

  4. Press and pat the food gently into the panko crumbs.

  5. Fry in oil until cooked, crunchy and delicious.
